My wife and I have been to NZ 6 times in the last 10 years and going again next February. For new timers I would suggest January and the South Island. You could look at Queenstown and stay in one of the hotels. Good courses in the area Millbtook, Jacks Point and. Queenstown. If you rent a car a 45 minute drive to Wanaka which has a very nice course and and another short drive to Cromwell with another nice course. Staying in Wanaka is a little cheaper than Queenstown. This area is mountainous and very beautiful. Lots to do on days when not golfing.weather in January quite nice.
